I take a tougher cut, sear the both sides (fat side first) in hot olive oil then set aside.
In the same pot I ad onion, celery, garlic, fresh tyme, salt/ pepper and one bay leaf. Let carmalize. Add most of a bottle of red wine and half a box of low beef broth.
Return cut of meat to pot, cover and cook in oven at 350 for three hours.
