help.
I'm going to be cooking a goose this Sunday for Solstice and have never cooked one before.
Any tips, suggestions, yearnings to visit the far north to cook a goose?
 
It should cook like a turkey.
It will have more fat, so it will remain moister than a turkey.

Solstice, huh?
Stuff it with onions, celery, carrots and Pears.

I suggest a Good Cloven Fruit cider.
Or a mulled red wine.
Real cranberry sauce, sweet potatoes, a strawberry/pear compote, ...

Yes, it would be very interesting to come up and cook for you.

yeah, I thought (from what I've heard) something tart like cranberry sauce to counter the fatty-ness of the goose...

we have alot of apple orchards not far from here and the ciders they produce are excellent....so there's another check

What size of a goose are you making?
 
well hell...turns out it's only ten pounds..that should feed oh six peeps. :(

Some day I will branch out and try to cook other kinds of birds. I've never cooked a goose or a duck, and every time I mention it everyone gives me the yuck face.
 
The ducks we cook....are we supposed to have sex with them beforehand?

I only cook chicken, and that's it. And I'm usually just doing it for buffalo chicken sandwiches (which I had Friday night, btw). I'm a big fish eater, though.
 
Definitely have sex with the ducks prior to roasting. It makes them juicy and tender.

Parakeets are too small except if you boil them.

Tuna!! Haha...I R dirty-minded.

All kinds, really; salmon, scallops (go great in my risotto), clams, mussels, tilapia, mahi mahi, crab, lobster, oysters.
 
my goose was cooked! and i gotta say, yum! -I like a bird that's all dark meat.

I find tilapia to be dirty .

Canned tuna or fresh?
Sushi?

seafood stew, bisque, half shell.....

I wish I had a GOOD, QUALITY grocery store close to me.
 
^Both kinds of tuna. There's this great package of garlic & herb tuna that I will mix in with some penne and artichoke hearts. Fresh tuna only if someone else is cooking it, though. That takes forever.

I loooooooove sushi. My friend got me hooked on it when I lived in VA, and now I'm back in TX and was afraid there wouldn't be as many options, but was pleasantly surprised to find there are tons of sushi restaurants all over the DFW metroplex. My sister also has gotten into it too because it's gluten-free, so we'll eat it all the time.

Lobster bisque is delicious, and I love Tom Thumb's chowder.
