Hurley runs from the beach, at sea level, for about a minute at most, then finds teh van, only a minute from the beach they have lived on for three months.

Ok, I'll buy that he went in a different direction than anyone has gone in teh last three months, even if its only a minutes run from the beach.

But the van is not only a minute from the beach (sea level) but also at the top of a huge fucking hill? (not sea level)

Other that, yeah, it was very odd. I'll have to watch it again, but did they move it at all before ending up on the golf course? Maybe they just hadn't gone into all the bushes round there. With the exception of Locke's boar hunts the islanders tend to take very direct routes because they want to get from one place to another quickly so they can save whoever, maybe they just never had a reason to be in those bushes.

Sometimes events which would be considered very boring, such as "Hurley running a lot" would not be shown in a TV show, and would leave it to the viewer to imply that he has done it.
