Let's fuck some shit up
So, I decided to make some cookies. Short bread with a small depression in the center for a dollop of marmalade or jam.
It's the simplest recipe for cookies but they look like it takes hours.
Well, it does take hours if you make your marmalade from scratch like I did.
Anyway, It's 4 1/2 cups flour, 1 1/4 cup light brown sugar, and a pound of unsalted butter. Mix the ingredients, and then roll the dough into a 1/4 inch sheet. Cut circular cookies out of the dough and place them on a non-stick or greased cookie sheet. Once they're on the sheet place a quarter-sized depression in the center (don't push all the way through, you still want dough on the bottom). Take a jam, marmalade, preserve, or jelly of your choice and place a teaspoon's worth of marmalade in the depression. Heat your oven to 275 degrees C and bake for 25 min.
This is important. When you take the cookies out of the oven, let them cool for a bit on the cookie sheet or else you'll break them apart when removing them from the sheet. Let them cool and eat up.
This recipe makes about four dozen cookies.
