What I don't get is that Willow and Xander seemed like they had been friends with Jesse for a long times, maybe as long as Willow and Xander had known each other. And it's a big thing when he gets killed, too. And then they never talk about him ever again and there's no pictures of him or anything.

I had similar thoughts but ultimately Buffy (circa season 1 & 2) kept both of them distracted enough with her awesome bod and super powers to completely forget their old geeky friend Jesse McNally.

He was going to appear to Xander in Conversations with Dead People (as a form of The First) but Eric Balfor wasn't able to do it. 
If they had got him and Amber Benson that episode would've been even better than it is now.
Same with The Girl in Question and Michelle Trachtenberg.
