I am lactose intolerant, please don't tease. I do loves me some colby-jack though...almost worth the onslaught of diarrhea.

Actually I can tolerate colby-jack cheese, something about the way it's aged makes it have less lactose or something. I got sick the other day when I ate several slices of pizza though. :(
 
I've been hungry for a grilled cheese sandwich ever since I saw Martha Stewart on tv the other day making them. She was making one that had very thin slices of apples in them. I've been wondering how that would taste.

Cheese dates back to before recorded history, perhaps as far back as 6,000 B.C.E. We know that cheese was part of the Sumerian diet, 4000 years before the birth of Christ, made from both cows’ and goats’ milk and stored in tall jars. Egyptian tomb murals circa 2000 B.C.E. show butter and cheese being made, and other murals which show milk stored in skin bags suspended from poles demonstrate a knowledge of dairy husbandry.
