I'm eating fried liver with potatoes and some salad. I don't know about you but castup goes great on both the liver and potatoes.

You can keep the liver messenger, but I would KILL for some potatoes and ketchup right now.
 
I can't stand the term 'home fries' for some reason. I don't make fries myself, but I do occasionally chop potatoes in buttons and fry those after boiling. Crispy goodness!
 
One of my all time fave snacks...and funnily enough I haven't made it in years...is slicing potatoes extremely thin and frying them.

Kinda like thick homemade potato chips.

I had those every Sunday morning as a kid.
 
Good suggestions above. The crispy goodness I mentioned is half fried, half steam (with the cover over the frying pan).

You can do so much with potatoes. Sometimes you can add lemon juice while boiling, and sometimes a bit of sour cream and butter after draining. And if you slice them thin you can make that side of boiled potatoes in 5 minutes!

Chives. Can't forget chives.
 
Mashed potatoes, whipped in a blender. Add butter and cream, (not milk), and you have that side dish for a special occasion.

It reduces the time it takes to fry them (Less grease) and reduces the chances of charring here and there. Try it with a single tater next time you're making some.
