Yum! I’ve recently started to brine chicken thighs or breasts for a few hours before I cook them. Such a simple step but they turn out tender every time.
Yes, always brine your meats, you'll get so much more flavor out of them, especially chicken. Just remember that your brine is also slowly cooking your food so you typically only want to brine your chicken for about three hours. You can go over night, but it's not necessary.
 
So that recipe is for a brine? Looks good.

I tried the breading suggested in the video, but I didn't like it which is why I left it out of the recipe. The brine works just fine for roasting or grilling.
