I don't remember Odo ever turning into a Jem'Hadar.
 
Me either, I just realised that was in a comic. But the point is, he managed to mimic plenty of objects and animals that were just as complex as humans, if not more so.
 
Mimicking the light panel in the beginning of Way of the Warrior seemed more difficult to me than any humanoid...BUT IT'S DS9 SO I DO NOT QUESTION IT.
