My pot pie thread

Well, this time I'm using the buttery type biscuits for the crust. Should add more flavor. I used a poultry rub on the chicken. (Which I cook fresh). A long with a small amount of lemon pepper. I might skip the mixed veggies this time, since the kids didn't eat much of it last time due to the peas I included in the recipe.
This brand of biscuits was harder to mold into a single top crust however. Though, I am convinced it will taste the same.

That looks awesome, Dirk.

It was delicious.

This is the greatest great pot pie thread in the great history of great pot pie threads.

My recipe was requested in the Badlands version of the Pot Pie thread, so I figured I'd post it here as well for the MF's benefit.

Preheat oven to 350 degrees.

Take some chicken breasts. I use the frozen kind from Safeway, but if you have fresh, it's even better. Cook them to your liking. Whatever oil, spices, etc. Cut them into very small pieces, and finish cooking them. Then, place them on a paper towel.

Then get a can of biscuits. Grands works the best. One can should be OK, but you might want to have a second can just in case. Take most of the biscuits and flatten them as much as possible. Line the bottom and sides of a regular size glass pie pan, to make the crust. (Never tried it with a metal one, but it should work)

Place as much of the chicken as you want in the pie, then pour on a can of cream of chicken soup, and mix them around a bit until the chicken pieces are coated. You can add whatever kind of veggies you like. Then take the remaining biscuits and flatten them out to make the top crust of the pie.

Place in the oven and cook for 20 - 30 minutes. (Or until the crust is golden brown)

Someday you should try it with Pillsbury pie crust. The kind that's in a box, should be in the same area as the canned biscuits. That is the best already made pie crust EVAR, srsly.

I'll try that next time. It sounds good, and easier than the biscuits. Does it come with a top crust? If not I'll still have to use the biscuits for that.

It's just round pie crusts, they're not cooked or in a pan. I think there are four in a package, so plenty to make a top and bottom crust.
