And the sausage v. ham battle continues.. OMG IT'S A BLOODBATH.
I like both ham and sausage, but we do not make a habit of raising pigs (thank you dear lord baby Jesus) and curing ham isn't the specialty of the butcher we use. He does make a mean sausage. Also this sausage will come in handy during hunting season when we spend lots of time sitting around the campfire cooking meat on sticks over said fire. I pray every year to the Gods of the hunt that no one in my family kills a boar hog.. boar hog sausage is disgusting. I know there are boar hog fans out in the world, but it's too gamy for me. blech. I prefer my pig in nicely wrapped cellophane from the grocery store. Beef is another matter altogether and I enjoy raising cattle.
