Like how the Doctor became sentient becasue he was left operating for longer than he should have been, R2 has become sentient because his memory is never wiped? Or are all droids sentient? Because if they are I don't think we should be killing them.

His memory was wiped. At the end of Episode III, Bail Organa tells one of his bodyguards to wipe Artoo's and Threepio's memory.

Yep. And Threepio says "oh no!" which is the last line of the movie. Would have been better if he'd said "I'm doomed!" since "we're doomed!" is the first line of the first movie, BUT OH WELL LOL.
