Tacos? I prefer enchiladas, but am happy to have a well made taco anytime. I got experience I lived in Santa Fe 5 years lol.
Jack's Sour Cream Chicken Enchiladas.
Poach the chicken. Process to salad when poached (think serving 4)
Make the chili. I like to take a half dozen poblanos, a couple jabanero, some good fresh green chile (san juan pueblo north of SF was always my favrorite local source) couple bulbs of garlic and some sweet onion cleared in olive oil. Don't forget the tomato paste and whatever fresh whole tomatoes you might have. Mix all together and cook for a few hours til yummy.
Take a tortilla and fill the center with the chicken salad (hopefully you used eggs mayonnaise to mix the chicken salad), then cover with the chili mixture and put a shitload of shredded whateveryoulike cheese ontop. Then fold burrito style. Top with gobs of chili and more shredded cheese. Bake at 350 about 8 minutes (till cheese melts)
Take out of oven, cover with quacamole (first) then sour cream.
Eat.
