I am fortunate to have hippy-dippy foodie friends and one time they somehow gave me some kind of fancy shi-shi cheese AND...I forget, ground buffalo meat or elk or something. I've always wanted to try the...French? burger with the cheese on the *inside* but it seemed wrong because it would be hard to keep the meat rare but melt the cheese, but this was all fancy enough that I decided to try it. It was amazing. Only regret is that this wasn't the same time they brought me fresh unsliced bacon straight from a butcher, where I cut the slices myself. I'd never buy that stuff for myself, but I sure was happy to eat it.

I love stuffed burgers. Try it with chevre, or a good strong aged swiss.

And garlic. Microwave for 30 secs, smash and stick in the burger.

Good times.
