Sandwiches

Pretty soon the weather will turn cold. Then it will be hot sandwich time.

Open roast beef sandwich with brown gravy .... yummmmmmmy.
 
Awww...but the gravy is the best part.

I'm going to totally fuck up my diet this week since I'm on vacation. We're even going to eat at the Paula Deen buffet at Harrah's. Gods, save me.
 
You can make a low carb gravy if you use half and half instead of milk (or just use cream, but it's the flour that's a bitch and the corn starch too.

One tablespoon of flour = 6 sugar grams of carbs, so you have to be really careful. One tablespoon of corn startch = 7 sugar grams, and that's BARELY enough to make a good gravy, and your already at 13 grams.

If you make gravy the traditional way, it is NOT good for you at all. It's animal fat mixed with white flour!! Here is a more healthy gravy to serve over your food.

First, you can take the easy way out and grab an Atkins gravy thickener from your local store or on the web. Simply mix this with a bullion cube and you're all set. I've also seen jars of Atkins and low carb gravy mixes on the shelves. It all depends what your store carries.

If you want to make some from scratch, it's important to know how gravy works. Gravy is the flavorful fat liquid from a meat, where you add in a thickener to make it more rich. Normally you would add in flour, but we don't want to do that. So we need to add in something else to make it thick.

A common substitution is eggs. As you know, when you heat up egg, it gets thicker. Egg's flavor is very mild, so you really don't taste it in the gravy either, any more than you "taste" the flour you would have added.

So let's say you're doing a turkey. You would pour off the drippings from the turkey into a saucepan on the stove. Slowly stir in 2 egg yolks, mixing them in well. If you want, you can also add in 1/2 cup of heavy cream. That will help the mixture have a great consistency. A dash of pepper and salt will give a bit of flavor to it. Depending on the flavors of your main dish, you can also add in oregano or other spices, to give a nice freshness.

This should be about 1g carbs per serving.

Atkins also makes a product called "Thicken/Thin" which adds no sugar carbs, only fiber...that's a good one too.
 
I'm 42. I eat what I want when I want. My cholesterol is excellent for a man my age. My blood sugar? WTF is that?

I suspect I'm maybe 10 lbs overweight.... but when skinnier I don't feel as good as I do now.

I eat the freshest food possible... easy since I live in the countryside. Fresh meat. Fresh farm eggs... none of that crap from the store. Fresh veggies. I don't eat sweets or cakes because I don't like them.

I smoke and I swill Mountain Dew like it's water. I also do this crazy thing called exercise... and I don't mean running on a wheel like a rat.

All ya'll diabetics and assorted cripples line up and lick my ass.
 
Poor us, the stupid dollfucker doesn't get adult onset hyperglycemia, so fucking what? Hopefully you won't learn the hard way.

And I get 90-120 mins of 119 bpm exercise EVERY day. Every other day I also press between 95 and 110 lbs on 12 different weight machines, when I'm not out stacking the 4 cords of wood I use to heat the house for the winter. I used to weigh 208 (about three years ago). These days I'm 162, and my BFR is about 22. Cholesterol at 95. Blood pressure at 119/80. A1C at 6.5

So I know when I've been licked. You can get off your knees ANYTIME :D

Marie Callendar's frozen dinners are awesome. The ones with gravy are actually very, very good too. Of course, not as good as freshly made, but as a frozen dinner, they surpass anything I've found in the freezer cases.

I'm currently exploring the Smart One, Healthy Choice, Lean Cuisine, and South Beach dinners. Some of them suck - majorly. Others are quite tasty.

When I retire I might start a fast food joint just for diabetics. By then McDonald's may have gone that way.
