If the creators don't like the 'zombie-like' aspect of Sylar's consuming the brains of others maybe they should have thought about that before they had him opening up skulls.
It'd be more elegant for him to be able to manipulate his own DNA with his ability/abilities after 'seeing' the DNA of others and using it as a blueprint for altering his own.
Nothing's been revealed, so it's all pointless speculation about fiction which has yet to be written.
